Wayward Pastry is led by a small team of folks with a passion for good food and good service.
Colton grew up in Chattanooga and got into baking at 18, starting with pizza before a help wanted sign led him to Niedlov's and changed everything. From there he traveled to Louisville, Lander, Wyoming, and LA, where he served as Director of Operations and head pastry at Larder Baking Co, a wholesale bakery founded by two James Beard alumni. When he's not baking, he's climbing. He's back in Chattanooga now to help open something special for the neighborhood.

Jill spent the last 25 years in Wyoming. She started with an ice cream shop before eventually taking the helm at the legendary Lander Bar. Along the way she founded a boutique hotel and Italian restaurant. A passionate climber, she first encountered Colton's pastries in Lander long before she ever met him. It wasn't until she made her way to Chattanooga that the two connected and decided to build something together.
ELLIE
Ellie's roots are in Wyoming and Washington State, and she found Chattanooga felt like home the moment she saw the water. She holds her certification from the Seattle Barista Academy and brings a careful, practiced approach to coffee. When she's not behind the bar, you'll find her tending to her house plants.
