Wayward Pastry is led by a small team of folks with a passion for good food and good service.

Jill • Owner

Jill spent the last 25 years in Wyoming where she built a career as an accomplished restaurant owner and hospitality professional. She started with an ice cream shop before eventually taking ownership of the legendary Lander Bar. Along the way she also founded a boutique hotel and Italian restaurant. She now calls Chattanooga (and specifically, St. Elmo) home.

Colton grew up in Chattanooga and got into baking at 18, starting with pizza before a help wanted sign led him to Niedlov's and changed everything. From there he traveled to Louisville, Lander, Wyoming, and LA, where he served as Director of Operations and head pastry at Larder Baking Co, a wholesale bakery founded by two James Beard alumni. When he's not baking, he's climbing. He's now back in Chattanooga creating pastries for the community he grew up in.

ELLIE • coffee

Ellie's roots are in Wyoming and Washington State, and she found Chattanooga felt like home the moment she saw the water. She holds her certification from the Seattle Barista Academy and brings a careful, practiced approach to coffee. When she's not behind the bar, you'll find her tending to her house plants.
